Hi All,
Any reccomendations for bike shops in Sydney?

Or better yet, for 3 bike shops.

The bike is a 91 Honda CBR1000F

One for the cheapest prices on genuine Honda and some aftermarket parts?

One for reasonable prices and decent service on jobs I'd rather not do
myself (valve adjustments, cam chain replacements etc) and maybe even the
odd oil change if the price is right

One for tyres.

Any experiences with shops, good or bad?

MMT in Granville have always done right by me, and they don't blink at
older bikes. Even ones much older than '91! (but other shops may,
Sydney is a new bike town)

Chivo's in Granville if you don't mind pulling your own wheels. Skidz
in Croydon.

The guy at Skidz was very pleasant but charged me $70 to fit two tyres
I'd just bought off him... I'd consider that quite expensive
(Northside used to charge $40 I assume they still do).
