I think Oily's problem was just that he didn't understand your
techno-geek-speak. Once I explained what you meant by quoting &
attributions, he got the idea.

This guy otoh - where do you start? I did consider explaining
everything that was wrong with his post, then came to my senses when I
spotted he's a webtv user.

As an aside, why do people who claim to have been reading UKRM for
years *always* do things like this with their first post?

Now, using webtv - that's a reasonable excuse. I really didn't have
the timne to bang out 50 lines of techno-geekisms that wouldn't have

Short answer: slow heating at incubation temperatures leads to massive
bacterial multiplication, therefore consumption of an "infective dose"
followed by severe and persistent food poisoning symptoms.

Bringing up to temperature rapidly and maintaining at least 70 Celsius
for at least two minutes (or, preferably a higher temp for longer)
would see pathogens destroyed and their toxins with them.
