Looking at adverts, it seems if I buy the camera, I can't take pictures with
it until I buy a lens?

Indeed. The camera itself (called the body) require a lens in order to work.

But this is their beauty, as you can buy as many or as few lenses as you can
afford, and they range from a few quid up to 10k and beyond.

Yes. You want a 'package' which includes camera + lens. Typically
the retailer will do a bundle which also includes a memory card, and
perhaps a bag for it all too. This is what I bought, from Bristol
Cameras, last year.
